What started out as the cuisine of a tiny Chinese community settled in the eastern city of Kolkata has spread all over India. Today, Indo-Chinese cuisine is one of the most preferred cuisines for Indians when eating out. Starting out as experiments to substitute certain ingredients of classical Chinese cooking with those readily available in India, Indo-Chinese cuisine has developed a strong personality all of its own, with some new dishes developed exclusively in India which are unheard of in China.
